Pelau is a stew from Trinidad made with either beef or chicken. The unique flavour comes from searing the meat in caramelised sugar then simmering with rice, coconut milk and chickpeas. Serve accompanied with slices of tomato, avocadoes or cucumber.

Quinoa is a low GI grain. This is a great light lunch especially to take to work or uni. I chop the capsicums and mix them up with quinoa (rather than leave them in halves) if I'm packing them as a lunch.

Beetroot risotto topped with haloumi and boiled eggs. I was inspired to cook this after being served beetroot risotto in a very expensive restaurant and being very disappointed. So I made it how it should have been made! Preparation time is only 5 minutes as you do most of it whilst you're cooking the rice!

This is a easy, wonderful, light yet filling meal with turkey, rice and fresh veg! Fun to eat! You will need at least eight bamboo skewers for cooking the meat. Use beef or pork mince instead of turkey if you wish.
