This is a rich and nutritious dip, great with Turkish or Lebanese bread, crackers, tortilla chips or just spooned onto a salad! If you prefer to use dried beans, soak them overnight, then simmer in enough water to cover for approximately 45 minutes, until soft.

This is a different take on pesto + prawns + pizza. All the ingredients of pesto - olive oil, garlic, basil, pine nuts and parmesan cheese - are placed on the base of the pizza base, then topped with prawns, anchovies and mozzarella cheese. Very easy, and very tasty. I find that with pizza toppings, less is more!!

We had a creek in the backyard with all this wild watercress growing along it so I just adjusted a standard pesto recipe that I still make even though I don't live on the creek anymore! It's great with pasta, on salads, as a dip etc like any pesto.

The first time I tasted baked ricotta cakes was when I was living near the Gourmet Platter store in Corrimal. Once a week they had tastings of new products and I fell in love with the texture and flavour of their ricotta cakes with ham and capers. The recipe isn't difficult and you'll be surprised how good it tastes. If you spend the time whipping the egg whites you'll find the texture similar to a souffle - llght and fluffy.
