This is a really basic way to roast capsicums for use in any recipe. Choose any colour capsicums you like, or use a variety of colours. It's even quicker if you use the grill. After they are roasted you can add olive oil and balsamic vinegar, or lightly pan-fry in olive oil and garlic to serve with feta cheese on crunchy toast.

This recipe makes plenty of seriously buttery pecans to snack on. Great finger food. You need to use good quality salted butter.

This is a simple way to prepare a turkey without stuffing. The secret ingredient is butter - it enhances the bird's natural flavour. When the turkey is done, the juices may be used to prepare a gravy by adding cornflour 1 tablespoon at a time until the gravy begins to thicken.

Butternut pumpkin has a sweet, intense flavour and, when roasted with bright yellow corn kernels, makes a glorious vegetable treat for autumn and winter. It is particularly good with roast chicken.

Roasted chicken wings with a sticky, sweet coating. Serve with rice and broccoli as a main, or on its own as a starter or party nibble.

This was my mother's signature recipe. Simple, but classic - you can't go wrong. Slice it lengthwise, very thinly. Leftovers are great on sandwiches with mustard.

Slices of roasted chicken spread over a bed of fried rice, with a mango sauce poured over the top. I have included my recipe for fried rice here, but any would be suitable. The better quality the mango the better the dish. I have not tried this with fresh mangoes as you need the juice from the tin, however I'm sure it would add to the flavour to use fresh mango and a mango nectar or juice.

This stuffed crown roast is a splendid showpiece for a special dinner. If you order it in advance, a butcher will prepare the crown for you.

This always comes out tender and juicy even if you overcook it a little. The breadcrumb crust holds in all the juices. Works well for chicken breasts, too.

In this traditional recipe, the chicken is given a delicious, cheesy crumb coating that lends it texture and flavour.
