This delicious stew is inspired by my friend from Sierra Leone, West Africa who cooks often for her family. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

Perfect for feeding a crowd at a summer barbecue, this is a tasty twist on the classic American recipe for baked beans. The variety of beans used gives the dish great flavour, along with the streaky bacon. Try this for a break from the ordinary. If you don't have French's mustard to hand, substitute half a tablespoon of English mustard.

Chicken breasts and drumsticks baked with artichoke hearts and black olives in white wine and chicken stock; a touch of tarragon provides a perfect finish to this savoury Mediterranean-inspired dish. Serve with crusty bread to mop up the delicious juices.

Sautéed asparagus, pancetta and rocket tossed in pasta with rocket and lemon juice make a simple flavourful dinner with minimal cooking. I often use spaghetti for this and you can substitute any pasta. Serve with grated parmesan if liked.

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use Thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets.

This is the most popular of Greek soups. The name means 'egg and lemon', the two most important ingredients that produce this light and nourishing soup. Garnish this quick and easy version with fresh lemon slices.

My mum came up with this recipe when I was a teenage vegetarian - and it is one of my meat-loving husband's favourite dishes and still one of mine to this day.

Trout in foil parcels, baked with green chillies and lemon juice. An impressive presentation, and there's no washing up! Use red chillies if you prefer a little less heat.

This stew is traditionally for St. Patrick's Day but is also suited to more cooler weather. Either way, the mixture of the beef and Guinness is awesome! I usually add more beer than the recipe calls for and serve it with mashed potatoes.

Beef prepared à la bourguignonne is best started overnight to maximise the rich flavour of the beef and red wine. It's worth using a good-quality red in the dish—you'll appreciate the superior flavour.

The use of a flour-and-water paste to seal the casserole is an old cooking technique that ensures no flavour or moisture is lost.

This is a nutritious and delicious Mexican soup, called a 'caldo'. It is too dense to be a soup, and is almost a stew, except the liquid hasn't been thickened. The flavours are deep and rich.

A hearty beef and vegetable casserole that can be left to cook or made ahead and then reheated before serving. Cook the dumplings on top shortly before serving.

Topped with thick slices of garlic and herb bread, this casserole is hearty and satisfying. It's an ideal dish for entertaining because it can be prepared ahead. Serve with mashed potatoes and steamed seasonal greens for a complete meal.
