This is a delicious risotto style dish that is quick and easy to prepare. It's an easy dinner and very economical. Not for the risotto purists!

This delicious stew is inspired by my friend from Sierra Leone, West Africa. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

Perfect for feeding a crowd at a summer barbecue, this is a tasty twist on the classic American recipe for baked beans. The variety of beans used gives the dish great flavour, along with the streaky bacon. Try this for a break from the ordinary. If you don't have French's mustard to hand, substitute half a tablespoon of English mustard.

Chicken breasts and drumsticks baked with artichoke hearts and black olives in white wine and chicken stock; a touch of tarragon provides a perfect finish to this savoury Mediterranean-inspired dish. Serve with crusty bread to mop up the delicious juices.

This is just a family recipe that I have changed slightly, the flavours are stronger. It is a simple dish with just simple ingredients but you will need a large pot to fit all the ingredients (can be a 1 pot dish if you wish). This dish is an overnight dish. Leaving it overnight in the fridge allows the excess oil/fat from oxtail to float to the top, therefore easily removing them.

Sautéed asparagus, pancetta and rocket tossed in pasta with rocket and lemon juice make a simple flavourful dinner with minimal cooking. I often use spaghetti for this and you can substitute any pasta. Serve with grated parmesan if liked.

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use Thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required.

This is the most popular of Greek soups. The name means 'egg and lemon', the two most important ingredients that produce this light and nourishing soup. Garnish this quick and easy version with fresh lemon slices.

A one-dish meal of fish and lots of vitamin-rich vegetables. The fish cooks on top of the potatoes, tomatoes and rocket.

My mum came up with this recipe when I was a teenage vegetarian - and it is one of my meat-loving husband's favourite dishes and still one of mine to this day.

Trout in foil parcels, baked with green chillies and lemon juice. An impressive presentation, and there's no washing up! Use red chillies if you prefer a little less heat.

A simple, hearty and tasty vegetarian dish. Good as a light main, side, or as a tortilla filling with cheese. I always make a double batch and freeze some.

This colourful one-pot dish is very simple to make and ideal for a tasty and nutritious mid-week meal. Coconut milk, gentle spices and fresh coriander add an exotically fragrant note.
