This is a great Pad Thai that can be adjusted to your taste, add ingredients that you like and make it as spicy or tart as you want. This is a recipe for those who like it HOT, if you can't handle the heat, go easy on the chilli.

This fragrant, spicy soup is infused with ginger and garlic to give it a characteristic Asian flavour. Rounding out the soup and noodles are several super foods: cabbage, carrots, tofu, vinegar and corn. You can substitute diced cooked chicken for the tofu, and use any type of noodles you like.

I made this by accident one night! It was meant to be fried rice but instead of using overnight rice (the best rice to make fried rice as the texture is drier), I had instead used freshly steamed rice which was moist and fluffy

In Asia, there are different kinds of 'noodle soup'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the shallots as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. If you are adventurous, eat with chopped hot chilli pepper or add some dried chilli flakes to make the soup spicy.

Noodles are simmered with chilli oil, ginger, vegetable stock, soy sauce, and sesame oil. You could easily add broccoli or snow peas to this also.

Chinese noodles are double cooked, first in water until al dente and then in a frying pan until crisp and brown. If you'd like to spice things up, replace the sesame oil with chilli oil.
