I was trying to make something simple yet "yummy" for my kids lunchboxes. This makes approx 24 patty cake size. If using muffin pan you may only get 12 larger muffins and will need to adjust cooking time.

I got this recipe from a girl I met at Mothers Group. She bought the muffins along to a morning tea we had. My taste buds were struck down that day and I begged her for her recipe. Never was there a better muffin ingredients marriage than bananas and chocolate. These also freeze well and I often include them in my kids lunch box as they defrost in 20 minutes. Depending on the number of bananas and their size, you will usually get more than 12 muffins out of this recipe - but thats never a bad thing.

I love beer bread, LOVE IT! I found that I preferred it in muffin tins instead of in a loaf, because I love the crust and it made it easier to pack along for lunch with soups. I prefer the dark, heartier beers when I am serving with rich soups.

Make these scones when firm, sweet blackberries are in season. The addition of buttermilk to the mixture ensures the result is light and flaky. These are best eaten freshly baked, or on the day they are made, but will still be good the next day; store them in an airtight tin.

I love baking! I found this recipe in a magazine and have adapted it slightly to the way I would cook it. I hope you enjoy it as much as I did! If you want, you could swap the blueberries for raspberries or blackberries, and the lemon for vanilla.
