I was trying to make something simple yet "yummy" for my kids lunchboxes. This makes approx 24 patty cake size. If using muffin pan you may only get 12 larger muffins and will need to adjust cooking time.

These delicious dessert muffins are best eaten warm from the oven. The addition of yoghurt makes the muffins wonderfully moist and soft - if they have to travel, pack them carefully because they will squash out of shape easily. This is for a blender but you can mix with a bowl and spoon if you prefer.

It's kind of like a lighter, cake version of the biscuits. I think this would be nice with a lemon icing but my neighbour, who made it, didnt have it iced.
