This Indian dish combines fresh spinach and ricotta in a creamy curry. Use paneer if you can find it. It is absolutely wonderful with basmati rice or naan (Indian flat bread). The key is in the spices, which you can find at an Indian grocery.

Anyone who truly loves you will love you with garlic breath, too! Chicken is pan seared and then finishes cooking on a bed of garlic cloves. Toss with tagliatelle and herbed tomatoes and onions. Use any cut of chicken you like with this recipe - two pieces per person.

This delicious stew is inspired by my friend from Sierra Leone, West Africa who cooks often for her family. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

A wonderful Italian recipe for an uncooked sauce made with fresh tomatoes. You don't have to cook a thing except for the pasta!

This dish melts in your mouth. The credit goes to my future mother-in-law. Each fillet should be approximately 2.5cm thick.

The easiest way to make this is with a slow cooker. The beef will fall apart easily with a fork, making it easy to shred. You can put the meat into the slow cooker either fresh or even straight from the freezer. Serve in pita bread or tortillas with shredded lettuce or coleslaw.

Capsicums are rich in cancer-fighting anti-oxidants and a good amount of parsley adds more beta carotene and vitamin C to the mix.

I came up with this recipe when all I had in the freezer was a packet of frozen spinach and a packet of chicken mince. Incredibly simple, but now a favorite in our house.

I started making this dish a few years ago after apple picking with my children. I was looking for something different to do with some of the apples and this turned out to be delicious! We all enjoy it and hope your family does too.

This is a great dish for using up autumn apples. Granny Smith or Golden Delicious apples work well.

Soy sauce and apricot jam are the base for this tasty glaze. You can also try orange marmalade for a citrus variation. This dish is a perfect weeknight supper served over boiled rice.

Simply combine apricot jam, vinegar, and brown sugar to make the sauce and then pour over chicken and bake. Serve with rice and a mixed green salad if desired.

Based on the Moroccan way of stewing meat with fruit, here lamb is marinated with mushrooms and herbs, then cooked slowly with dried apricots. Shredded cabbage and fresh mint enliven the couscous accompaniment.

No trip to Spain would be complete without sampling their famous rice dish, paella. The ingredients vary from region to region, but this recipe uses white fish fillets, squid and mussels. Serve with crusty wholemeal bread.

Chicken breasts and drumsticks baked with artichoke hearts and black olives in white wine and chicken stock; a touch of tarragon provides a perfect finish to this savoury Mediterranean-inspired dish. Serve with crusty bread to mop up the delicious juices.

This chicken salad has an Asian twist. Grilled chicken is tossed with oranges, spring onions, snow peas and lychees and is then crowned with a drizzle of creamy peanut dressing. What a treat for your heart and your taste buds!
