Anyone who truly loves you will love you with garlic breath, too! Chicken is pan seared and then finishes cooking on a bed of garlic cloves. Toss with tagliatelle and herbed tomatoes and onions. Use any cut of chicken you like with this recipe - two pieces per person.

This delicious stew is inspired by my friend from Sierra Leone, West Africa who cooks often for her family. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

Sometimes the best approach is the simplest one, as in this mix of chicken, mayonnaise, almonds and celery.

I came up with this recipe when all I had in the freezer was a packet of frozen spinach and a packet of chicken mince. Incredibly simple, but now a favorite in our house.

This is a great dish for using up autumn apples. Granny Smith or Golden Delicious apples work well.

Soy sauce and apricot jam are the base for this tasty glaze. You can also try orange marmalade for a citrus variation. This dish is a perfect weeknight supper served over boiled rice.

Simply combine apricot jam, vinegar, and brown sugar to make the sauce and then pour over chicken and bake. Serve with rice and a mixed green salad if desired.

Chicken breasts and drumsticks baked with artichoke hearts and black olives in white wine and chicken stock; a touch of tarragon provides a perfect finish to this savoury Mediterranean-inspired dish. Serve with crusty bread to mop up the delicious juices.

This chicken salad has an Asian twist. Grilled chicken is tossed with oranges, spring onions, snow peas and lychees and is then crowned with a drizzle of creamy peanut dressing. What a treat for your heart and your taste buds!

This is a crunchy, wonderfully satisfying salad that is fab with grilled chicken leftover from yesterday's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice vinegar. Fried rice noodles add the crunch. Dried Rice vermicelli noodles or ready prepared packets of crisp noodles are available in Specialist Asian stores and supermakets.

Pasta bows taste deliciously different when combined with an exotic dressing of fish sauce, fresh red chilli and rice vinegar in a moist chicken salad. Fresh crunchy vegetables complete this well-balanced main-course dish.

"In Asia, there are different kinds of 'noodle soup'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the shallots as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. If you are adventurous, eat with chopped hot chilli pepper or add some dried chilli flakes to make the soup spicy."

Asparagus is an impressive source of folate. It also provides vitamin C, as well as some beta-carotene and alpha-carotene.

This dish gets its kick from dried crushed chillies. It's a impressive impromptu supper when you have friends round at the last minute.

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use Thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets.

This club sandwich packs in lots of interesting flavours and textures. Crispy prosciutto replaces the usual bacon, and mashed avocado the butter. Adding a few leaves to a sandwich is a cunning way to get children to eat their greens.
