This is a great Pad Thai that can be adjusted to your taste, add ingredients that you like and make it as spicy or tart as you want. This is a recipe for those who like it HOT, if you can't handle the heat, go easy on the chilli.

Anyone who truly loves you will love you with garlic breath, too! Chicken is pan seared and then finishes cooking on a bed of garlic cloves. Toss with tagliatelle and herbed tomatoes and onions. Use any cut of chicken you like with this recipe - two pieces per person.

This is considered the Philippine national dish. The combination of soy sauce, vinegar, garlic, ginger and peppercorns is delicious and actually preserves the chicken! Great for picnics. My mother taught me how to cook this, using her variation from the original recipe.

This delicious stew is inspired by my friend from Sierra Leone, West Africa. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

Sometimes the best approach is the simplest one, as in this mix of chicken, mayonnaise, almonds and celery.

This is the best pie recipe i have ever invented, and the best thing is, theres almost no fat because of the butternut pumpkin pie base. One note though is that when rolling the pastry, it is very sticky so make sure to flour the surface and rolling pin well.

As weird as most people find this soup sounding, there is a resounding response. Everyone LOVES it. Also, it may be hard to find hominy, which is a form of corn maize, here in Australia. My solution is to replace it with a white bean.

I came up with this recipe when all I had in the freezer was a packet of frozen spinach and a packet of chicken mince. Incredibly simple, but now a favorite in our house.

This is a great dish for using up autumn apples. Granny Smith or Golden Delicious apples work well.

Soy sauce and apricot jam make up the tasty glaze on these chicken breasts. You can also try orange marmalade for a citrus variation. This dish is a perfect weeknight dinner served with rice.

Simply combine apricot jam, vinegar, and brown sugar to make the sauce and then pour over chicken and bake. Serve with rice and a mixed green salad if desired.

Chicken breasts and drumsticks baked with artichoke hearts and black olives in white wine and chicken stock; a touch of tarragon provides a perfect finish to this savoury Mediterranean-inspired dish. Serve with crusty bread to mop up the delicious juices.

Shiitake mushrooms, lettuce, cayenne pepper and fresh coriander flavour this classic light soup, which is based on chicken stock and made more substantial with vermicelli and threads of beaten egg.

A light, tangy and refreshing soup for lunch or dinner. Prep time will either be an hour or overnight- depending on how long you want the stock to sit. to let the stock sit for an hour
