If you like your cookies soft but not floury, these are for you. You can vary the choc-chips - I love them with mini MMs, or white chocolate and macadamias. Bake them to desired crispness (they firm well when cooled).

I threw this together with what I had in the pantry. I was craving an apple turnover and had some leftover apples so I decided I'd make my own version of one of my favourite desserts.

I was trying to make something simple yet "yummy" for my kids lunchboxes. This makes approx 24 patty cake size. If using muffin pan you may only get 12 larger muffins and will need to adjust cooking time.

This is the best pie recipe i have ever invented, and the best thing is, theres almost no fat because of the butternut pumpkin pie base. One note though is that when rolling the pastry, it is very sticky so make sure to flour the surface and rolling pin well.

These delicious dessert muffins are best eaten warm from the oven. The addition of yoghurt makes the muffins wonderfully moist and soft - if they have to travel, pack them carefully because they will squash out of shape easily. This is for a blender but you can mix with a bowl and spoon if you prefer.
