Take your vitamin C in the form of this luscious tropical fruit and you'll replenish potassium and vitamin A, as well. There's a good amount of fibre, too.

This Indian dish combines fresh spinach and ricotta in a creamy curry. Use paneer if you can find it. It is absolutely wonderful with basmati rice or naan (Indian flat bread). The key is in the spices, which you can find at an Indian grocery.

This delicious stew is inspired by my friend from Sierra Leone, West Africa who cooks often for her family. Many ingredients can be modified. This is kind of a 'whatever is handy now' recipe. You can use a whole roasting chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

This oddly wonderful combination of ingredients makes a surprisingly different and delicious soup that everyone will enjoy! Serve with a dollop of yoghurt on top and some crusty bread for dipping.

A wonderful Italian recipe for an uncooked sauce made with fresh tomatoes. You don't have to cook a thing except for the pasta!

Make this sweet almondy cake when fresh rhubarb is in season. This recipe makes two cakes so you can give one away.

This dish melts in your mouth. The credit goes to my future mother-in-law. Each fillet should be approximately 2.5cm thick.

Capsicums are rich in cancer-fighting anti-oxidants and a good amount of parsley adds more beta carotene and vitamin C to the mix.

My German grandmother used to make these every Christmas. She said using small eggs was a must.

This slice is easy and quick with only a few ingredients. Don't tell anyone that it is sour cream on the top of this slice and they will think that it is cream cheese!!!

I came up with this recipe when all I had in the freezer was a packet of frozen spinach and a packet of chicken mince. Incredibly simple, but now a favorite in our house.

This is a beautiful dish that's always a hit! This is a layered antipasti plate, so you can cut it in square slices neatly and find all the ingredients in every bite. Add veggies to your liking. Serve with fresh ciabatta or crusty bread. Enjoy!
