World's Easiest Scrambled Eggs

    I wanted something quick and easy to prepare for breakfast at work and this fits the bill beautifully, especially if you have only got a microwave oven and no stove available. This is so easy and delicious, I shouldn't be sharing it. The trick to making this work well is to cook it in the microwave twice.

    Ingredients
    Serves: 1 

    • 2-3 eggs
    • handful grated tasty cheese
    • 1 teaspoon crushed garlic
    • bacon pieces to taste
    • freshly ground sea salt and black pepper to taste

    Directions
    Preparation:1min  ›  Cook:3min  ›  Extra time:1min  ›  Ready in:5min 

    1. Grab a tallish microwave proof jug or similar and break two or three eggs into it and beat well. Throw the other ingredients in and mix well.
    2. Now comes the tricky part, microwave on full for ONE minute, remove from the microwave and you will see that it will be partly cooked and hot on top.
    3. Mix well again and the hot, cooked bit will mix with the raw bit, microwave again on high for TWO minutes, Bingo, perfect scrambled eggs.
    4. DO NOT add milk as this will only make the egg mixture sloppy and watery.
    5. Serve at once with salt and pepper to taste, do not be tempted to add the salt before cooking as this will make the eggs rubbery.
    6. For a bit of variety, you could add other ingredients like chives or mixed herbs, the beauty of this is that it can be adapted to suit individual tastes.

    The recipe doesn't state this, but II'm assuming that the bacon was supposed to be cooked (well, I cooked mine). I like the idea of a quick scrambling of eggs in the microwave, but I think what you need to keep in mind is the power of your microwave. The recipe says to cook 1 minute, stir, and cook an additional 2 minutes. Mine were completely overcooked at 2 minutes and ended up dry and rubbery. In the future, I will first check the eggs at 30 seconds because I suspect that a full minute may be enough for 2 eggs in my microwave. Garnished mine with some additional crisp bacon and some chopped tomato. Be cautious about your timing, check on the eggs early, and you should be fine. Putting aside the timing issue, my 4-star rating is based on the flavor of the scrambled eggs...they were good!  -  10 Feb 2015  (Review from Allrecipes UK & Ireland)
