    My mum always cooks this yummy turkey dish for birthdays, Easter, or Christmas. Very easy to make and its an absolute winner!! Chicken can also be use in instead of turkey.

    Ingredients
    Serves: 4 

    • 1 whole turkey (or whole chicken as substitute)
    • 6 big carrots
    • 15 mini onions
    • 1 bunch coriander
    • 1 jar of cranberry sauce
    • 1/2 cup vegetable stock
    • 1 cup basmati rice
    • 2 cups chicken stock

    1. Put turkey/chicken on the base of slow cooker. Cut up the carrots into small chunks, peel the onions, and chop up the corriander. Lay them around the turkey/chicken. Cover with vegetable stock and cranberry sauce. Cook for 6 hours. The slow method of cooking will bring out all the natural juice from the turkey.
    2. Cook basmati rice using chicken stock. Serve the turkey over rice. The juice/sauce of this recipe will provide a great flavour on the rice!!
