Delicious easy Quiche

    This is the perfect quick lunch dish. I got the recipe off a friend who served it to a Mums' group for lunch.

    Serves: 6 

    • 1 onion
    • 2 cloves garlic (crushed)
    • 2 medium kumara (sweet potato)
    • 2 T oil
    • 2 t chilli sauce (or 1 tsp chilli powder)
    • 1 can whole kernel corn
    • 4 eggs
    • 1/4 cup cornflour
    • 2 t baking powder
    • 1 t salt
    • ground pepper
    • (ADD: cubed chicken, OR ham, OR bacon, OR mushrooms OR pumpkin etc)

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat oven to 180 degrees C.
    2. Peel and finely chop onion. Peel and chop kumara finely into cubes
    3. Heat oil in pan, add onion and kumara with chili sauce and lightly fry for 3 min.
    4. Drain corn into pan.
    5. Beat eggs together and sift in the cornflour, baking powder, salt and pepper. Add whatever else you feel like (cubed chicken or ham etc)
    6. Combine both lots of ingredients.
    7. Pour into a greased 20-25cm round dish and bake in pre-heated oven for 1 hour (or until cooked). Serve with fresh garden salad

    This turned out really well. I used sweet potato, mushrooms, corn and onion for a nice vegetarian twist. I didn't have any chilli powder so I just used taco seasoning and that worked out well too. Probably wouldn't hurt to add another egg. Was great in my lunch because I'm at high school and we dont have microwaves or sandwich makers so I could still eat it cold.  -  02 Nov 2009
