    Delicately spiced banana pudding that's quick to make and even quicker to eat!

    Ingredients
    Serves: 2 

    • 60g butter
    • 1/3 cup sugar
    • 1 egg (beaten)
    • 1 ripe banana (peeled & mashed)
    • 1/2 cup (65g) SR Flour
    • 1 tsp mixed spice
    • good pinch cinnamon
    • 1/3 cup golden syrup

    Directions
    Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Cream the butter and sugar until pale & fluffy.
    2. Add the egg and stir to combine.
    3. Add the banana and stir to combine.
    4. Stir in the dry ingredients and beat the mixture until well mixed.
    5. Fold the golden syrup in gently to create a marbled effect through the pudding batter.
    6. Microwave for four to five minutes on full power.
    7. Allow to cool slightly and serve with a thick creamy custard.
