These are awesome to start you off for the day, get the metabolism working.

Serves: 8 

  • 1 1/2 cups (75g) wheat bran
  • 1/4 cup (30g) oat bran
  • 1 cup (125g) flour
  • 1/2 cup (100g) brown sugar
  • 2 tsp baking powder
  • pinch salt
  • 2 tsp ground cinnamon
  • 1/2 cup sultanas
  • 1/3 cup mixed seeds and/or chopped nuts
  • 1 medium carrot - grated (with skin)
  • 1 large apple - grated (with skin)
  • 1/3 cup (75g) low fat/salt reduced margarine/spread
  • 1 egg beaten
  • 1 1/2 cups skim milk

Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

  1. Mix the dry ingredients together (first 9 ingredients listed).
  2. Add the apple and carrot and coat with the bran/flour mixture.
  3. Melt the margarine in the microwave for 30 seconds and pour over the other ingredients. Stir in just a little.
  4. Beat egg and milk together and pour over other ingredients. Mix with spoon until just combined.
  5. Let the mixture sit for a few minutes so that bran can soak up some of the milk.
  6. Use a heaped tablespoon of mixture for each muffin onto your greased muffin tray (I just use a baking tray).
  7. Bake at 180 degrees for about 15 minutes.
  8. Serve plain or with margarine spread and/or jam.
