5 minute omelette in a mug

    This is a great way to make a quick-and-easy breakfast for one person. I add ham and capsicum-but you can vary that depending on what's in the fridge.

    Serves: 1 

    • 2 eggs, beaten
    • 2 tablespoons grated Cheddar cheese
    • 2 tablespoons diced ham
    • 1 tablespoon diced green capsicum
    • salt and pepper to taste

    Preparation:1min  ›  Cook:4min  ›  Ready in:5min 

    1. Grease or coat a microwave-safe mug with cooking spray. Combine all ingredients. Microwave, uncovered, on high for 1 minute; stir. Cook 1 to 1-1/2 minutes longer or until eggs are completely set.

    OK I had to try this one....not so much an omelette, more of a scramble in a cup. It was pretty good though, fast and convenient however when it comes to omelettes, for me I'd prefer the traditionally shaped folded over in a pan kind.....even if it does take a little extra effort.  -  23 Aug 2009

    i have just made this with ham mushrooms and creme fraich as additions and it was fanastic, a great recipe.  -  09 Oct 2013
