A tasty twist to the traditional roast... no baking oil needed

Serves: 6 

  • a roasting chicken-about 1.5 kg
  • ½ cup fresh basil
  • 125g butter
  • 1-2 cloves fresh garlic (to taste)
  • extra butter for basting

  1. Crush garlic finely, chop basil finely. add to butter to make a paste.
  2. Lift skin from around neck area of chicken, use fingers to get under skin. Don't break skin - then push butter mix under skin around tops of legs and over the breast area as far as possible
  3. Pat skin down into place Rub with extra butter on outside of skin especially on wings.
  4. Place on rack or non stick pan and roast for desired time.
