Nachos Footy Burger

    Nacho Ordinary Burger! Forget fiddly nachos and boring old burgers. This ultimate footy burger combines all your favourite flavours, tastes sensational, can be prepared ahead of the game and is a real crowd pleaser.

    Serves: 4 

    • For the refried bean burger
    • 500g minced beef
    • 1 onion finely chopped
    • 1 can refried beans
    • 1 packet of taco seasoning mix
    • 1 egg
    • 2 Tbs of plain flour (for dusting)
    • For the salsa
    • 4 Roma tomatoes sliced thinly
    • 1 thinly sliced red onion
    • 2 Tbs chopped jalapeno peppers
    • 2 Tbs finely chopped coriander
    • 1 clove crushed garlic
    • Pinch of salt and ground black pepper
    • For the guacamole
    • 2 ripe avocados (preferably Haas avocados)
    • 1 red onion finely chopped
    • 1 clove crushed fresh garlic
    • Juice of 1 lime
    • a couple of dashes of Tabasco
    • pinch sea salt and freshly ground black pepper
    • To assemble
    • 4 large sesame seed buns
    • 2 cups shredded iceberg lettuce
    • Heated refried bean burger pattie
    • 1-2 Tbs prepared salsa
    • Slice or two of Swiss, tasty or cheddar cheese
    • 16-20 crumbled corn chips/tortilla chips (approx 4-6 per serve)
    • 1-2 Tbs prepared Guacamole
    • Extra sliced jalapenos and coriander leaves (optional to taste)

    Preparation:1hour  ›  Cook:10min  ›  Extra time:50min  ›  Ready in:2hours 

    1. To make the refried bean burger
    2. Combine all ingredients in a bowl. Take about 1 cup of mixture. Roll each portion into a ball then flatten into circular pattie slightly larger than hamburger bun. Dust lightly with plain flour
    3. Cover and chill in refrigerator until needed.
    4. When ready, shallow fry or cook on griddle on medium heat for 4-5 mins each side, turning once.
    5. Salsa preparation; Combine all ingredients in a bowl, lightly combine and refrigerate until required.
    6. Guacamole preparation; Cut avocados in half. Remove seed. Scoop avocado flesh into a mixing bowl.
    7. Using a fork, mash the avocado until combined but still chunky. Add the chopped onion, lime juice, tabasco salt and pepper and stir lightly to combine. Adjust seasonings to taste.
    8. Cover with plastic wrap placed directly onto the surface of the guacamole to prevent oxidation. Refrigerate until required.
    9. Assembly preparation
    10. Pre-heat large frying pan over medium heat. Lightly butter the face of each bun and toast the buns.
    11. Assemble burger in above order. Voila!
