Swiss mushroom and broccolini soup

    This is an easy, one-pot soup that thrives on stove-top neglect.

    Serves: 6 

    • 1 bag (approx 250g0 swiss brown mushrooms
    • 2 bunches broccolini
    • 500ml vegetable stock (or make your own)
    • 300g low fat cottage cheese
    • salt/pepper/herbs of your choice
    • (herb suggestions include fresh coriander, cumin, star anise or rainbow peppercorns)

    1. Wash mushrooms and broccolini, roughly chop and set aside in a bowl.
    2. Bring vegetable stock to the boil, add mushrooms and broccolini, reduce heat and simmer uncovered until broccolini is tender and stock volume has reduced.
    3. Transfer soup to blender, add cottage cheese and blend to preferred consistency.
    4. Return to heat, add any herbs/spices you choose and reheat to preferred temperature.
    5. Serve with warm, crusty bread and fresh butter.

    Easy and quick to make. Had some fetta in the fridge and used that instead of the cottage cheese and it was great.  -  19 Jul 2015
