Handed down from my mum and its nice to eat on a cold day or night. Lentils cooked with vegetables and tomatoes. You can cook this ahead of time and reheat it while you are cooking the rice.

Serves: 4 

  • 1 cup (185g) of uncooked lentils
  • 1 medium carrot grated
  • half an onion diced
  • half a capsicum (green) diced
  • 2 stalks of celery washed and diced
  • 1 tomato quartered
  • a quarter of a bottle of Italian tomato pasta sauce (about 100g)
  • 2 tablespoons oil (not extra virgin oil too heavy for cooking , just a light one)
  • parsley salt and pepper to taste and water
  • 1½ cups uncooked rice

Preparation:30min  ›  Cook:1hour  ›  Extra time:30min  ›  Ready in:2hours 

  1. In a medium pot with a lid put all the ingredients with enough oil to cover the bottom of the pot. Add the sauce, let it simmer until you see steam coming out from the lid of the pot. Keep stirring so as not to burn it.
  2. Once you see the steam you add enough water until it's at least 5cm from the rim of the pot. Stir in the salt, pepper and parsley. Replace the lid, turn the heat to low and cook for an hour.
  3. Cook the rice in your preferred way and, when cooked, add it to the lentils and then dish it up into soup plates (or bowls) this will serve at least 4 to 5 people.
