    Light, fresh summer salad of lettuce, carrots, orange and cashews with an excellent orange dressing. Perfect side for any meat especially seafood.

    Ingredients
    Serves: 4 

    • 1/2 iceberg lettuce
    • 2 medium carrots
    • 2 navel oranges
    • 100g salted cashews
    • 2 tablespoons lemon juice
    • 1/4 cup orange juice
    • 1 teaspoon orange marmalade
    • 1 teaspoon Djion mustard
    • 1 tablespoon honey
    • 1 tablespoon canola or vegetable oil

    Directions

    1. Shred lettuce, grate carrot, peel and cut oranges into segments. Mix together well in a bowl.
    2. In a bowl (or screw to jar is really easy) add lemon juice, orange juice, marmalade, mustard, honey and oil mix (or shake) until combined. Pour dressing over salad when ready to serve and sprinkle with cashews.
