Simple Sausage Casserole

    I live on my own and sometimes when I am pulling an allnighter on the Internet, I want something quick and tasty with reheatable left overs and I reach for some sausages. Tasty, versatile and easy to clean up afterwards.

    Serves: 4 

    • 6 - 8 sausages at room temp (Pre-cooked sausages may be used)
    • 1 (450g) jar pasta sauce
    • sliced onion, garlic or herbs of your choice

    Preparation:15min  ›  Cook:12min  ›  Extra time:3min  ›  Ready in:30min 

    1. Bring 1/2 medium pot of water to the boil. Place sausages in the water and return to boil. As soon as boiling point is reached, cover, turn off the heat and leave for 10 minutes.
    2. Hold each sausage under cold running tap, peel and cut into 4 - 6 pieces.
    3. Empty 1/2 contents of pasta sauce into glass casserole dish, add sausage pieces and stir to cover. Add remaining pasta sauce and stir.
    4. Microwave on High for 12 minutes, stirring 3 times.
    5. Serve as required on toast, rice, with mashed potatoes and peas or however you choose.

    great recipe, my hubby cooked this recipe for tea tonight, it's very easy and simply delish, thanks! For an alternitive combine as above and place in a 200 degree oven for 20 - 25 minutes  -  16 Feb 2010
