Turkey Cobbler

    Good casserole-like savoury pie. The best thing about this recipe is that it freezes well. This makes 2 pies, so serve one, and freeze the other.

    Serves: 12 

    • 1 package long-grain wild rice
    • 1 medium onion, diced
    • 1 yellow capsicum, diced
    • 1 green capsicum, diced
    • 1 package fresh sliced mushrooms
    • 1 tablespoon oil
    • 1 can green beans, drained
    • 3 cups cooked turkey, chopped
    • 1 cup mayonnaise
    • 2 cups grated cheddar
    • 1 small can sliced water chestnuts, drained
    • 1 teaspoon poultry seasoning
    • 1 cup sour cream
    • 1 sheet frozen pastry, thawed
    • 1 egg, beaten

    1. Preheat oven to 180 degrees C.
    2. Prepare the rice according to package instructions and set aside.
    3. Saute onions,capsicum, and mushrooms in oil and set aside.
    4. Combine all ingredients except 1 cup of cheese and pie crust, into large bowl and mix well. Pour into greased 23cm glass pie plate. Top with remaining 1 cup cheese and set aside.
    5. Roll out pastry, cut into 1.5cm wide strips and cover dish in lattice design, then brush dough lightly with egg.
    6. Place in oven for 30 minutes, when top is golden brown, remove, let cool, and enjoy.

    Very yummy! I did not put the rice or chestnuts in, added leftover glazed ham and celery. It was def a must for leftover turkey, chicken or ham 😊  -  28 Dec 2013  (Review from Allrecipes UK & Ireland)
