Chocolate Mousse Cake

    This recipe was given to me by a friend who owned a cafe. I have made it many times and it never seems to fail. (I often put 2 tablespoons of liqueur or brandy into the mousse mixture after it has been melted together).

    Serves: 20 

    • 2 cups (440g) caster sugar
    • 2 eggs
    • 1 cup (280g) plain yoghurt
    • 3/4 cup (75g) cocoa powder
    • 200g butter, softened
    • 2 teaspoons bi carb soda
    • 1 1/2 teaspoons vanilla essence
    • 1/4 teaspoon salt
    • 2 1/2 cups (375g) self-raising flour
    • 1 cup hot strong coffee
    • Chocolate mousse
    • 90g butter, chopped
    • 300g dark chocolate, chopped
    • 1/2 cup (125ml) thickened cream

    1. Preheat oven to 160 degrees C. Grease a 23cm X 33cm baking dish or two 23cm round sponge tins.
    2. Place the sugar, eggs, yoghurt, cocoa powder, 200g butter, bi carb, vanilla, salt, flour and coffee in a large mixing bowl. Beat on medium for 30 seconds. Then scrape down bowl and then beat for 1 minute.
    3. Pour mixture into prepared tin. Bake for 45-50 minutes, if using large rectangular dish, or 25-30 minutes, if using two sponge tins. Stand cake in tin for 5 minutes before turning out onto a wire rack to cool.
    4. Meanwhile, make chocolate mousse

    5. Melt all ingredients in a small saucepan over low heat. Stir until well combined.
    6. Cool in fridge. When mousse is cold, beat using an electric mixer for 3-4 minutes or until thick. Refrigerate until firm enough to spread over the top of the cake.
    7. Spread mousse over cold cake.

    Altered ingredient amounts. 2 cake tins were used and whipped up some cream to fill the middle with about a tablespoon of the icing mixture. In a fan-forced oven both cakes took about 35 mins.  -  04 Aug 2009


    made this cake for my daughters birthday, it's easy to make but does take sometime however it's is definately worth it as it is just delicious and very rich. I've got a few friends who want me to make the cake for there birthday so it's a winner!  -  03 Nov 2009


    By my own rules, I don't bake cakes as they don't turn out so well. This cake however, was so easy and turned out absolutely perfectly. By all reports of those who ate it, they all thought it was bought!!  -  04 Aug 2009
