An easy to make yummy boston bun recipe that you can use your leftover mashed potato in. It is nice on its own or you can add coconut icing on top if you are a sweet tooth (like they do in some bakeries).
For the Boston bun
1 cup (220g) sugar (or sugar substitute)
1/2 cup mashed potato
1 cup (155g) sultanas
2 cups (250g) self-raising flour
1 teaspoon cinnamon
1 teaspoon mixed spice (optional)
1 cup (250ml) milk
For the Icing
185g icing sugar
2 teaspoons lemon juice
30g melted butter
3 teaspoons dessicated coconut (or amount desired)

40 min › Ready in:
Cream sugar and potato in a bowl and add sultanas.
Sift flour and spices and alternately add flour and milk to sugar mixture.
Pour into cake tin and bake in moderate oven (180 degrees C) 40-50 minutes.
Cool and ice if desired.
This recipe is great- I usually heat the mash potato before I cream with the sugar. The sugar melts quick and goes to liguid which works well. Very moist bun!

I made this today and it's great. If you want a quick easy teacake then this is just the ticket.
