Cheese and Onion Pie

    A tasty cheese and finely diced onion pie that is baked in a homemade pastry. The trick to making such delicious pastry is by using lard. I hope you enjoy.

    Serves: 6 

    • 170g plain flour
    • pinch of salt, to taste
    • 1/4 teaspoon baking powder
    • 90g lard or butter
    • water, to mix
    • 230g onion, finely diced
    • 60g grated cheese
    • 2 tablespoons milk
    • 30g butter
    • salt and pepper, to taste

    1. Place flour, salt and baking powder into a bowl. Rub in lard and mix into a stiff paste with the water. Boil the onions in a little water until tender then strain.
    2. Roll out half the pastry and line the pie dish with it. Place in the onions. Scatter cheese on top. Season with salt and pepper. Dot over butter. Add milk.
    3. Roll out remaining pastry and fix to top of pie. Make 2 sharp cuts on the top of pie. Brush over with egg. Make 2 sharp cuts on top of pie. Brush over with egg. Bake at 180 degrees C for 20-25 minutes.
