High in fibre, vitamins A, C and a whole lot of other good stuff. Meanwhile just 142kJ per serving.

Serves: 5 

  • 1/2 cup carrots
  • 1/2 cup shredded cabbage
  • 3/4 cup canned beans or peas
  • 1/2 cup chopped celery
  • 1 cup beef stock
  • 1 1/2 cups water
  • 1 1/2 cups canned tomatoes
  • 1/2 tab garlic

Preparation:5min  ›  Cook:30min  ›  Ready in:35min 

  1. Put chopped vegetables, stock and water in a pot. Simmer until tender (30 minutes)
  2. Season to taste, then store in refrigerator for up to a week

I didn't have beef stock, so I used vegetable stock... and I used white kidney beans. Salt and pepper was all this needed.. delish. This is also good pureed and cold. - 17 Jun 2015
