High in fibre, iron, manganese, magnesium, niacin, phosphorous and very high in A, B6, C and potassium. Just 205kJ per serve, so its something you can really fill up on for snacks or meals. All amounts are approximate so you can play around with it a bit.

Serves: 6 

  • 3 cups tomato juice
  • 1 1/2 cups diced tomatoes
  • 1/2 cup celery
  • 3 cups cabbage
  • 1/2 cup onion
  • 3/4 cup carrot
  • 1 cup green capsicum
  • 1/2 cup parsley

Preparation:10min  ›  Cook:2hours  ›  Ready in:2hours10min 

  1. Put diced veges in a large pot with tomato juice and any seasonings eg. garlic, basil.
  2. Bring to the boil then lower heat.
  3. Simmer for at least 2 hours, the longer the better.
  4. Can be refrigerated for up to a week.

This soup was simple to make and quite tasty. Added some pepper, basil and bay leaves to enhance the flavours. Was quite hearty. - 04 May 2013
