Bacon, Zucchini and Capsicum Omelette

    Something I whip up quickly after a tiring day. I omit the egg yolks which makes it just under 500 kilojoules per serve.

    Serves: 1 

    • 1/2 cup zucchini, sliced
    • 1/4 cup red capsicum, sliced
    • 2 rashers rindless bacon
    • 2 egg whites
    • Salt and pepper

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. 1. Chop the bacon into bite size pieces and saute for a few minutes. Add the vegetables and saute for a few minutes. They should still be slightly crisp.
    2. 2. Whisk the egg whites in a bowl and season to taste. Add to the vegetable mixture. Cook until opaque.
