Made from vegetables, each rissole has just 165 joules and 0.1g fat. Very high in vitamin A, C and B6, and high in fibre, potassium and riboflavin. No saturated fat or cholesterol.
1 zucchini, grated
1 potato, peeled and grated
1 carrot, grated
1/4 cup onion, grated
1/2 tsp oregano
2 egg whites
- Combine ingredients in a bowl and mix well.
- Mould 1/2 cup amounts into rissoles.
- Fry for a few minutes each side, or bake in a moderate oven until golden.
Flavour was ok, BUT these aren't rissoles these are rostis. Rissoles have barley etc in them and are covered in breadcrumbs.
