Vegetarian Rissoles

    Made from vegetables, each rissole has just 165 joules and 0.1g fat. Very high in vitamin A, C and B6, and high in fibre, potassium and riboflavin. No saturated fat or cholesterol.

    Serves: 6 

    • 1 zucchini, grated
    • 1 potato, peeled and grated
    • 1 carrot, grated
    • 1/4 cup onion, grated
    • 1/2 tsp oregano
    • 2 egg whites

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Combine ingredients in a bowl and mix well.
    2. Mould 1/2 cup amounts into rissoles.
    3. Fry for a few minutes each side, or bake in a moderate oven until golden.

    Flavour was ok, BUT these aren't rissoles these are rostis. Rissoles have barley etc in them and are covered in breadcrumbs.  -  24 Nov 2014
