Made this the other night because we wanted greens but didn’t want all the salad to be cold. Therefore the grilled tomatoes and steamed kumara. It all went together really well.
lettuce greens of your choice: a whole cos lettuce, bunch of rocket or a mix of greens
2 medium kumara
For the dressing
equal amounts of olive oil and balsamic vinegar (or whatever vinegar you prefer)
1 clove garlic chopped
2 teaspoons fresh oregano
- Peel the kumara, slice into sticks and steam till barely done. Slice the tomatoes in half and put them under the griller on high. Tear the greens to bite size.
- Make the dressing by shaking the vinegar, oil, garlic and oregano together in a bottle.
- When the kumara is done, take the tomatoes off at the same time. They may not be fully cooked but they'll be warm.
- Put the kumara and the greens in a bowl and toss the dressing though. Chop the tomatoes into quarters and throw them on the top. Serve.
The sweet potato also makes this a filling salad too. Simple but good...funny thing was people couldn't work out what the sweet potato was cos they'd never eaten it in this way:-)
