Very Rich Fudgy Chocolate Mousse

    This chocolate mousse is extremely rich, but is a huge seller in my restaurant!! Serve with whipped cream and a strawberry. For diabetics, Simply either leave out the sugar or use your chosen sweetener.

    Serves: 8 

    • 200g chocolate (70%+)
    • 4 eggs, separated
    • 100g unsalted butter (softened)
    • 2 teaspoons caster sugar
    • 1 vanilla bean, scraped

    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Melt chocolate over simmering water until melted.
    2. Add the butter. ALWAYS add butter first (If you add the eggs first, the chocolate will go grainy). I usually add the butter a little at a time.
    3. Add egg yolks 1 at a time and beat until smooth and glossy. While warm, add the seeds from vanilla bean.
    4. Whip egg whites until soft peaks form. Sprinkle over sugar and continue to whip until satiny.
    5. Gently fold whites into chocolate mixture and pour into small serving dishes, keeping in mind how rich this mousse is. Chill until required. Bring back to room temp before serving.
