    Another great cookie cutting project to share with the kids. Once cooled, you can ice them, add sprinkles, dust with icing sugar or simply dip them in melted white chocolate. (They need 2 hrs refrigeration time before rolling out)

    Ingredients
    Serves: 10 

    • 1 1/2 cups (185g) plain flour
    • 3/4 cup (90g) cocoa powder
    • 1 1/4 teaspoons baking powder
    • 1 pinch salt
    • 3/4 cup (185g) softened butter
    • 1 1/4 cups (250g) caster sugar
    • 1 egg

    1. In a large bowl, combine the flour, cocoa, baking powder and salt. Set aside.
    2. Blend the sugar and butter in a food processor until smooth and add an egg. Blend until combined.
    3. Gradually add the wet ingredients to the dry to form a soft pliable dough. (You may not need to add all of the sugar/butter mixture here.)
    4. Flatten the dough into a thick disc and wrap in plastic wrap. Refrigerate for 2 hours.
    5. Preheat the oven to 190 degrees C.
    6. With a heavy rolling pin, roll the dough out on a floured surface and cut into shapes with cookie cutters. If the dough is sticking, add more flour to the work surface to prevent this.
    7. Place shapes onto a flat tray lined with non stick baking paper. Bake 10-12 minutes. Cool and add icing and sprinkles or simply dust with icing sugar.

    These were really yummy - tasted a bit like brownies (I didn't have enough white sugar so i used half brown sugar). I made them with my 2 year old and didn't bother to refrigerate before rolling and cutting, and they worked out fine. - 18 Apr 2016

    Quick and easy - we kept batter for a couple of days before making into cookies. Best to make them at least 1/2 cm min thick for best results. - 29 Nov 2012

    Good recipe just a little plain by themselves. Great for serving to guests with a cup of tea though - 06 Dec 2009
