Liv's Berry Granita

    This combination of raspberries and strawberries should soon settle your fruit cravings. Full of vitamin C!

    Serves: 5 

    • 175 grams (3/4 cup) caster sugar
    • 625 ml (2 1/2 cups) berry flavoured tea
    • 250 grams (1 2/3 cups) strawberries
    • Juice of one orange
    • 150 grams ( 1 1/4 cups) raspberries, to serve

    1. Dissolve the sugar in the hot tea and set aside to cool. In a blender or food processor, blend the strawberries with the orange juice to a puree.
    2. Stir the pureed strawberries into the cool tea and pour into a plastic container about 15 x 20 cm. Cover and put in the freezer for 2 hours.
    3. Remove from the freezer and use a fork to break up the ice crystals, mixing them back into the chilled liquid.
    4. Repeat this process every 40 minutes until you have a container filled with flavoured crushed ice.
    5. If freezing overnight, remove from the freezer and allow it to soften for 30 minutes before breaking up the crystals and returning it to the freezer.
    6. To serve layer the granita with the raspberries in tall glasses.
