Peppers with Feta

    This is a side dish, ment to be eated when hot, dosent take long to prepare, so if u have other food to prepare do it first. Also a great meze for beer or tiporo.

    Serves: 8 

    • 8 green horn (or chilli) peppers (long red ones)
    • 1/2 cup olive oil
    • 1 large onion, grated
    • 1 large tomato, finely chopped
    • 1 Tbls parsley, minced
    • 200grams feta, coarsely chopped
    • olive oil
    • oregano
    • ground pepper

    1. Wash peppers, cut off tops and carefully remove seeds without tearing skin. Poach peppers in boiling water for 5 min, drain ans set aside to cool.
    2. Meanwhile, saute onions in olive oil. Add tomato, ground pepper, and oregano. Stir and remove from heat. Let cool slightly, then stir in feta and parsley.
    3. Fill peppers with mixture. Brush peppers with oil then grill or fry, turning until all sides are browned.
    4. Serve hot.
