Custard and Apple Muffins

    These would make a great morning or afternoon tea snack. Even invite some friends around to share as this recipe makes 12 serves.

    Serves: 12 

    • 2 cups (250g) self raising flour
    • 1 cup (125g) plain flour
    • 1/2 teaspoon nutmeg
    • 1/2 cup (90g) brown sugar
    • 1/4 cup (40g) custard powder
    • 100g butter, melted
    • 1 cup (250ml) milk
    • 1 egg, beaten
    • 2 large apples, grated
    • 3/4 cup white chocolate bits
    • 1/4 cup white chocolate bits
    • 1 apple, grated
    • 2 tablespoons brown sugar

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat the oven to 200 degrees C.
    2. Combine self-raising flour, plain flour, nutmeg, sugar and custard powder together. Fold in butter, milk, egg, apples and white chocolate bits. Spoon into greased muffin tins.
    3. Combine topping ingredients and spoon a little on each muffin.
    4. Bake for 25 minutes at 200 degrees C.
    5. Serve warm with cream.

    Altered ingredient amounts. Though these muffins taste delicious they look a bit bland - don't be put off! Made 12 big muffins and enough mix left for 12 mini muffins which my baby son loved. I used gala apples but they went rather brown which didn't add to the way they looked  -  03 Mar 2010


    Makes a very thick batter because of the custard powder so added just a little more milk to be able to combine better.  -  20 Jul 2009


    This is a great muffin recipe. Very moist. Would be fantastic warm with cream. Very tasty. Made more than 12.  -  20 Jul 2009
