Great as a side dish. Use as a meze with tsiporo....
1 kilo potatoes
small bunch of parsley, finely chopped
2 eggs, lightly beaten
200 grams feta, crumbled
flour for rolling
oil for frying
- Scrub potatoes and boil in their skins. Remove skin and mash. Add parsley, eggs, feta,salt and pepper. Combine thoroughly.
- Shape mashed potato mix into walnut-sized balls, roll in flour and fry until golden.
