This is like a focaccia, can be eaten hot or at room temperature. It can be eaten as a snack on its own or along side a meal. You could make sandwiches with it, great for picnic and lunches, healthy.

Serves: 10 

  • 2 cups (250g) white flour
  • 1 tsp (5 gr) dry yeast
  • 2 tbls olive oil
  • 1 tsp oregano
  • 10 green or black olives, pitted
  • 100 gr feta, crumbled
  • 1 small tomato, finely chopped
  • pinch of salt
  • pepper

Preparation:50min  ›  Cook:40min  ›  Ready in:1hour30min 

  1. In large bowl, dissolve yeast with a cup of warm water. Add olive oil, oregano, and olives. Gradually add salt and enough flour to form smooth dough. Cover with a cotton kitchen towel and let rise in warm place until double.
  2. Punch down and divide dough in two. Shape each piece into a loaf and sprinkle with feta and tomato. Bake at 180 c for 40 min.
