Uncle Bill's Zucchini Pancakes

    This recipe was given to me by my Grandmother over 60 year ago. Very easy to make and can be served for breakfast, brunch, lunch or just a snack anytime.

    Serves: 4 

    • 2 cups finely grated zucchini - 2x20cm zucchini required
    • 4 large eggs, beaten
    • 3/4 cup (90g) plain flour
    • 1/2 teaspoon white sugar
    • 1/2 teaspoon salt
    • 3 tablespoons extra virgin olive oil
    • 4 teaspoon baking powder
    • 1/4 cup melted butter for rub on pancakes
    • 1/4 cup sour cream or yoghurt

    1. Wash and grate zucchini, (do not peel). In a large mixing bowl, beat eggs; add grated zucchini and mix well using a fork.
    2. Add flour, sugar, salt and olive oil and stir well to blend.
    3. Finally, add baking powder and stir until incorporated, (do not beat). Batter consistency should be like heavy whipping cream.
    4. Preheat griddle or frying pan to medium-high heat.
    5. Rub griddle or frying pan with olive oil before cooking each batch of pancakes.
    6. Spoon about 2 tablespoons of batter for each pancake on hot griddle.
    7. Cook until bubbles begin to form, about 1 1/2 minutes, turn pancake over and continue to cook for another 1 to 1 1/2 minutes or until pancakes are done.
    8. You may need to adjust heat, depending on the type of griddle or frying pan you are using.
    9. When pancakes are done, rub with melted butter and serve immediately or place in a warm oven until more pancakes are cooked.
    10. Serve with your choice of jams, syrups and add a dollop of sour cream or yoghurt.

    Nice simple alternative pancake recipe. I did not have a big enough courgette but added some grated carrot to make up the quantity.  -  13 Jan 2017  (Review from Allrecipes UK & Ireland)
