Heather's Bolognaise Vegetable Bake

    I was craving lasagne but I wanted to make something healthy while dieting that I could also serve the rest of the family who weren't. And sometimes when I'm working the day shift I will make this up on Sunday and place in containers so that I have lunches already prepared for the week. All I have to do is pop it in the microwave at work and heat.

    Serves: 4 

    • 4 cups mixed vegetables e.g. broccoli, carrot, beans, onion (anything you fancy or have on hand)
    • 1 tub of ricotta or cottage cheese
    • 4 spring onions, chopped
    • 1 tsp crushed garlic (bottled is fine)
    • 1 1/2 cups bolognaise mince sauce (I prepare my own and freeze in batches)
    • 1/2 cup grated tasty cheese

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C. Steam or microwave veges til tender. Place in lightly greased ovenproof dish.
    2. Mix ricotta or cottage cheese with spring onions and garlic. Dollop and flatten spoonfuls of bolognaise randomly on top of veges. Do the same with the ricotta/cottage cheese mixture.
    3. Sprinkle with grated cheese. Bake in oven at 180 degrees for half an hour.
