These rolls are a hit with my three children. Being so quick and easy to make they are perfect as a mid week meal served with a salad - and leftovers make a delicious lunchbox treat for the kids.

Serves: 8 

  • 6 sheets puff pastry
  • 500g fresh ricotta
  • 500g frozen spinach, thawed and drained
  • 4 onion shallots, thinly sliced
  • freshly ground pepper and sea salt to taste

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Divide each sheet of pastry into quarters.
  2. Mix all remaining ingredients in a large mixing bowl. Spoon 1 1/2 tablespoons of the mixture down the centre of each quarter and roll into a sausage roll shape to encase the filling, pressing on each end to seal.
  3. Bake in preheated oven at 200 degrees C for 25 mins or until golden.

For two of us I divided the recipe by 4 and used 1 sheet of pastry which made two rolls each. I used 1/2 red onion,chopped as I didn't have shallots. Served with salad and potatoes, very nice. Will certainly make again. Made this a 2nd time and enjoyed it once again. Tasty, easy and quick....thank you. - 18 Nov 2010
