Mix all remaining ingredients in a large mixing bowl. Spoon 1 1/2 tablespoons of the mixture down the centre of each quarter and roll into a sausage roll shape to encase the filling, pressing on each end to seal.
Bake in preheated oven at 200 degrees C for 25 mins or until golden.
For two of us I divided the recipe by 4 and used 1 sheet of pastry which made two rolls each. I used 1/2 red onion,chopped as I didn't have shallots. Served with salad and potatoes, very nice.
