Pea, nut and water chestnut salad with a lime cream dressing

    Peas, macadamias and peanuts mixed with celery and water chestnuts in a cream, sesame oil, lime and soy sauce dressing.

    Serves: 6 

    • 500g frozen peas
    • 4 sticks celery chopped
    • 1 cup salted roasted peanuts, crushed
    • 2/3 cups macadamias, toasted, crushed
    • 227g can of sliced water chestnuts, drained
    • for the dressing
    • 200ml cream fraiche
    • 1 tablespoon soy sauce
    • 2 teaspoons sesame oil (be heavy handed here!)
    • 1/4 teaspoon honey (add more)
    • 1 teaspoon lime juice (add more!)
    • 1 tablespoon chopped parsley

    1. Cook peas, drain under cool water.
    2. Combine celery, nuts (crushed), water chestnuts & peas in bowl & add dressing
    3. Mix together well
