Marlz Carrot Cake with Cream Cheese Icing

- 2 cups wholemeal flour
- 2 cups sugar
- 2 cups sultanas
- 2 teaspoons baking soda
- 4 cups grated carrot
- 4 eggs
- 1¾ cups cooking oil
- 2 teaspoons mixed spice
Preparation:15min › Cook:55min › Ready in:1hour10min
- Preheat oven to 180 degrees C. Line an oblong baking tin (30x20cm) with baking paper.
- Mix all dry ingredients together.
- Mix all the liquid ingredients together - fold into one another.
- Pour into the tin.
- Bake in the middle shelf of the oven for 50-60 minutes till a tester comes out clean.
