Marlz Carrot Cake with Cream Cheese Icing

    I have made this cake for many years. It never fails to live up to expectations.

    Serves: 15 

    • 2 cups wholemeal flour
    • 2 cups sugar
    • 2 cups sultanas
    • 2 teaspoons baking soda
    • 4 cups grated carrot
    • 4 eggs
    • 1¾ cups cooking oil
    • 2 teaspoons mixed spice

    Preparation:15min  ›  Cook:55min  ›  Ready in:1hour10min 

    1. Preheat oven to 180 degrees C. Line an oblong baking tin (30x20cm) with baking paper.
    2. Mix all dry ingredients together.
    3. Mix all the liquid ingredients together - fold into one another.
    4. Pour into the tin.
    5. Bake in the middle shelf of the oven for 50-60 minutes till a tester comes out clean.

    I found the recipe really easy to make. I only used half the amount of oil in the recipe (which I generally do with all recipes) I felt it was still to oily for my taste.  -  21 Nov 2011  (Review from Allrecipes UK & Ireland)
