My 8 year old daughter Hannah and I designed this indulgent recipe for Good Friday this year and everyone loved it!

Serves: 8 

  • 1 packet of meringue nests
  • 1 250g packet of cream cheese, softened
  • 1 tub King Island chocolate cream dessert or Nestle choc mousse or similar
  • 1/2 cup (125ml) cream
  • 100g of chocolate
  • whipped cream and raspberries to serve

Preparation:15min  ›  Extra time:15min  ›  Ready in:30min 

  1. Mix cream cheese and chocolate dessert until well combined.
  2. Place cream and broken chocolate in a microwave safe jug and cook in 20 second bursts until cream is warm enough to melt chocolate. Mix until it all comes together and slightly thickens. Add to cream cheese mixture and stir until thoroughly combined.
  3. Refrigerate a few hours or overnight.
  4. Place meringue nests into serving dishes, divide and place mixture evenly on top of meringue nests. Top with cream and raspberries and raspberry juice - if any. ENJOY!

Something else. if you can't find the chocolate dessert you can make a small chocolate mousse to mix with the cream cheese - 09 May 2009
