    This baked carrot and zucchini side dish is a great way to get vegetables into little mouths. Loaded with egg and cheese, this tasty side goes great with any main.

    Serves: 4 

    • 3 zucchini, grated
    • 3 carrots, grated
    • 1/2 red onion, thinly sliced
    • 1 cup self raising flour, sifted
    • 4 eggs, lightly beaten
    • 1/2 cup extra light olive oil
    • 1 cup grated cheese
    • salt and pepper, to taste
    • olive oil spray

    1. Preheat oven to 180 degrees C. Grease a baking dish.
    2. Combine zucchini, carrot and onion in a bowl then stir in the flour, eggs, oil and cheese until well combined. Season with salt and pepper to taste then pour into the baking dish.
    3. Bake in preheated oven for 50 to 60 minutes.
