    This is a chicken and noodle soup a bit different from the regular. It's especially good if you have a cold - add more garlic if you like!

    Ingredients
    Serves: 8 

    • 4 cups (1 litre) chicken stock
    • 2 cloves garlic, minced
    • 3 tablespoons grated fresh ginger
    • 2 zucchinis, chopped
    • 280g cubed cooked chicken
    • 1 packet (250g) rice noodles
    • 1 bunch fresh spinach, washed and chopped

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Bring the chicken stock, garlic and ginger to a boil in a large saucepan; reduce heat to medium and cook for 10 minutes. Add the zucchini and cook until the zucchini is tender, about 10 minutes more.
    2. Stir in the chicken and the noodles; cook until the chicken is hot and the noodles are soft and transparent, about 3 minutes.
    3. Stir in the spinach until wilted.

    This soup was absolutely delicious and so easy to make! I added mushrooms and onions and only had about 2 Tbsp of ginger. Only thing I will change next time is adding the zucchini at the same time as the chicken. They got a little bit too mushy for my taste.  -  17 Jun 2010  (Review from Allrecipes USA and Canada)

    What a great healthy soup, and it was a big surprise in taste. My whole family loved it. I always have homemade chicken broth in the freezer for soup -- it's much, much better than canned (see my review for chicken broth). To this soup, I added half of a chopped onion, cracked pepper, sea salt, fresh basil, and a combination of chopped zucchini and yellow squash. I had all the ingredients onhand, except for cellophane noodles (so this was omitted) and fresh ginger (so I used small amount of ground ginger), which didn't seem to compromise the flavor.
