Chicken Noodle Soup with Spinach and Garlic

This is a chicken and noodle soup a bit different from the regular. It's especially good if you have a cold - add more garlic if you like!


Serves: 8 

  • 4 cups (1 litre) chicken stock
  • 2 cloves garlic, minced
  • 3 tablespoons grated fresh ginger
  • 2 zucchinis, chopped
  • 280g cubed cooked chicken
  • 1 packet (250g) rice noodles
  • 1 bunch fresh spinach, washed and chopped

  1. Bring the chicken stock, garlic and ginger to a boil in a large saucepan; reduce heat to medium and cook for 10 minutes. Add the zucchini and cook until the zucchini is tender, about 10 minutes more.
  2. Stir in the chicken and the noodles; cook until the chicken is hot and the noodles are soft and transparent, about 3 minutes.
  3. Stir in the spinach until wilted.
