    I made a ginger chicken and decided it needed something extra so the next time I made it, I made a CARAMELISED ginger chicken and it turned out sensational.

    Serves: 3 

    • 1 pack diced chicken (approx 500g)
    • 1/3 cup of caster sugar
    • 1/3 cup chicken stock
    • 3 slices ginger
    • 1 clove Garlic, crushed
    • 1 capsicum, finely sliced
    • 1 can (420g) corn
    • Cooked rice to serve

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. In a fry pan, heat sugar and chicken, tossing regularly for 3-4 minutes.
    2. Add chicken stock, ginger and garlic and simmer for 3 minutes.
    3. Add capsicum and corn and cook till another couple of minutes more.
    4. Serve on rice and eat!
