    Anyone who has tried this mac n cheese has asked me for the recipe. It has never failed for me and I hope others will enjoy it too. The trick to this recipe being tasty is to not be shy on the cheese! To save time, cook the bacon and onion in the microwave while making your cheese sauce.

    Ingredients
    Serves: 4 

    • 500g packet pasta curls or macaroni elbows
    • 2 tbsp olive oil or rice bran oil
    • 2 tbsp plain flour
    • 1-2 tsp wholegrain mustard (according to taste preference)
    • 600ml trim or original milk
    • 4-5 cups tasty grated cheese
    • 1 tomato , sliced thinly
    • cracked pepper and salt
    • 6 rashers fat free bacon, or fat free deli sliced ham
    • 1 large onion, roughly chopped

    Directions

    1. Cook pasta according to packet directions. Or place pasta in a large microwave safe bowl, cover with boiling water from the jug, and microwave on high for 10-12 minutes until aldente, drain and set aside.
    2. Preheat oven to 170 degrees C.
    3. Slice the bacon or ham into small pieces, mix with chopped onion, place in small microwave safe bowl and cover, cook on high for 5 minutes, stirring once during cooking.
    4. Heat oil in a large saucepan, only until warm, do not allow to sizzle. Remove from heat, add flour, stir to mix. Add a little milk to form a smooth paste, then add mustard and stir. Return to heat, gradually add milk , stirring consistently, until sauce is desired thickness. Remove from heat and add cheese, stir. Season with salt and pepper to taste.
    5. Place pasta in a large casserole dish or pan. Mix onion and bacon into the cheese sauce, and add mixture to the pasta. Mix thoroughly. Top with some more grated cheese if desired, and thinly sliced tomato. Season with cracked pepper and salt. Place in pre heated oven at 170 Deg C, or fan bake if desired, cook for 20 minutes until top is golden.
    6. Serve with crusty hot garlic bread.
