A simple meatloaf using beef mince and rice and flavoured with Asian-style herbs and spices. Includes a nice sauce made of sweet chilli, tomato and soy sauces.
small amount vegetable oil or butter
500g lean beef mince
1 bunch fresh coriander, finely chopped
1 large brown onion, finely chopped
3 cloves garlic, crushed under a knife and finely chopped
6 dehydrated shiitake mushrooms, soaked 15 mins in boiling water, drained and pressed between kitchen paper, then finely chopped
1 long red chilli, seeds removed and finely chopped
2 cups steamed long grain rice, cooked well before use and allowed to cool
2 teaspoons ground cumin
1 tablespoon ground turmeric
1 tablespoon ground ginger
4 teaspoons cayenne pepper
4 teaspoons freshly ground white pepper
salt to taste
75ml sweet chilli sauce
75ml tomato sauce
1 tablespoon dark soy sauce

Preheat oven to 190 degrees C.
Grease 1 1/2 litre meatloaf pan with a small amount of vegetable oil or butter.
Combine all ingredients except chilli sauce, tomato sauce and dark soy sauce in a large glass or ceramic bowl and mix thoroughly, making sure all ingredients are evenly distributed.
Spoon mixture into the meatloaf pan, pressing down to remove any air pockets, and level the surface for even cooking.
Place in oven and bake for 45 mins.
Mix tomato chilli sauce, tomato sauce and dark soy sauce in a glass jug.
At the end of 45 mins baking, pour the sauce mix over the surface of the meatloaf and return to the oven.
Bake for another 15 mins or until the sauce has taken on a syrupy texture.
Remove from the oven, cover with alfoil and leave to rest for 10 mins.
Serve hot or cold with steamed or stir-fried vegetables or a green salad.
This was great! Lasted our family 2 meals, we served with green salad and a light dressing. Would possibly increase amount of sauce, but great just as it is. Definitely on our menu again! Nice bit of spice if you leave in the chilli seeds.

An easy recipe to prepare. Stimulating to the taste buds. Quantities of ingredients can be adjusted according to personal taste.
